Ana Docta believes vending machines should dispense more than candy, Cheetos and chips.  With her new business, Kasana Good-To-Go, she wants to offer fresh, flavorful, organic food in vending machines as healthy alternatives in the halls of schools, businesses and other facilities.

 

Docta was joined by other community leaders to celebrate the grand opening of her latest venture last week at Ascension Lutheran Church, 1236 S. Layton Blvd., where she's cooking up granola, vegetable and bean salads, empanadas, panna cotta and Argentine cookies in the kitchen of the church.

Kasana Concierge Gourmet, a caterer and organizer of pop-up dinners, is hoping to open what owner Ana Docta calls a culinary colletive at 241 N. Broadway in the Third Ward and eventually a bistro there as well.

That's the former Broadway Bistro * Bakery space, in the building's lower level.  Docta is seeking permits from the city to proceed with her four-phase plan that would culminate in the restaurant.

Broadway over the last few months, is a grab-and-go café, a restaurant, an events space, a catering service and a shared commercial kitchen all in one.

KASANA, 241 N. Broadway in Milwaukee's Historic Third Ward will roll out the red carpet for a grand tasting event, featuring fall flavors expertly paired with delicious wines on Nov. 21 beginning at 6 pm.

John Edwards, formerly of Ray's Liquor in Tosa, will walk attendees through the aromas, distinctions and experience of each wine presented.  John's wines will be paired with gourmet offerings from owner Ana Docta.

Only 40 seats are available for this one of a kind event.  Tickets are $62.50 per person or $110 per couple for seven courses and six wines.  Phone 414-224-6158 to reserve your place at this long awaited culinary event.

Over in the Third Ward on Broadway, KASANA Cafe has been open for business just a year.  It has so much kitchen space owner Ana Docta rents out to other businesses.  "I have a food truck, I have a pretzel company and I have a non profit organization."  Ana breaks down the menu at Kasana's, "organic, no antibiotics, no hormones and a little flair of Argentinian and Brazilian food."

 

Ana is a self proclaimed germaphobic.  "I bring this from my home. Everything have to be santized, everything have to be in perfect condition."  For a spotless kitchen Kasana gets our second Blue Ribbon Award.
